Hummus consumption attenuates post-prandial blood glucose and insulin responses compared to carbohydrate-only foods, due to its low glycemic index and fat content slowing gastric emptying.

Pair hummus with high-carb foods like bread or crackers. The fat and fiber in hummus slow down digestion, resulting in a significantly lower blood sugar spike compared to eating the carbs alone.
