In insulin-resistant subjects, a monounsaturated fatty acid (MUFA)-rich diet significantly improves postprandial glucose and insulin responses compared to a carbohydrate-rich diet, while increasing GLP-1 secretion.

If you are insulin-resistant, choosing a diet rich in monounsaturated fats (like olive oil) over a high-carbohydrate diet can significantly improve your blood sugar and insulin response after meals.
