In vitro digestion using the INFOGEST protocol demonstrates that intact proteins from diverse sources (whey, collagen, zein, legumes, cereals) are fully hydrolyzed during the intestinal phase, although digestion-resistant peptides persist in all substrates.

When you eat protein from any source (meat, dairy, beans, grains), your digestive system breaks down the large protein structures into smaller peptides during the intestinal phase. While some resistant peptides remain, the large intact proteins are gone. This suggests that digestive capability is not the primary limiting factor for plant vs. animal protein absorption in a healthy gut.
